Classic Roasted Chicken
Cook Time: 1-2 hours
Serves 4-6
Ingredients
1 whole chicken
2 cups of carrots
2-3 cups of chopped potatoes
Salt and pepper to taste
½ onion chopped
1 Tbsp of olive oil
Instructions
Preheat oven to 375 degrees
Place chicken, onion, carrots and potatoes, in a roasting pan or cast iron skillet. Season generously with salt and pepper and olive oil.
Bake for 1.5 to 2 hours. Or until internal temp reaches 165 degrees. Enjoy!
