Fried Green Tomatoes
Ingredients
2 green tomatoes, sliced into ½ inch slices
2 eggs
1 cup flour
1 cup cornmeal
1 tsp paprika, optional
1 tsp cayenne, optional
Canola oil
salt & pepper to taste
Method
In a medium skillet, heat about ¼ inch of canola oil over medium-high heat.
In a bowl whisk together eggs and set aside. Mix cornmeal, paprika, cayenne, salt & pepper, and set aside. Put 1 cup of flour in a bowl and set aside.
Dip tomato slices in flour, then dip into egg, then press each side into cornmeal mixture. Repeat with each tomato slice.
Working in batches, place as many tomatoes as will comfortably fit in the pan. Fry until golden & crispy, about 3-4 minutes each side.
