Pickled Radishes with Crema
Ingredients
Radishes, Cherry Belle – 1 bunch
2-3 fresh limes or equivalent lime juice
Lime Zest
Sour Cream or Crema – 1 cup
Pinch of Salt
Method
Trim off greens and thinly slice radishes.
Place radish slices in small bowl and cover with lime juice. Radishes should be completely submerged in juice. Leave to soak for 5-10 mins
Meanwhile, Mix 1 cup sour cream with 2 Tbs of lime juice and the zest of 2 limes. Add salt to taste and mix together.
Once radishes are soaked, dip radishes in sauce and enjoy! This is also a great taco sauce and topping! If you prefer your radishes really crunchy, skip step 2.
