Kale Strawberry Salad
2-3 servings ~ 10 mins prep
Ingredients:
1 bunch kale
1 cup strawberries, sliced
1 cup summer squash, chopped (optional, or sub your favorite seasonal veggie)
¼ cup sunflower seeds
¼ cup feta or goat cheese
Dressing:
3 tbsp apple cider vinegar
3 tbsp olive oil
2 tsp Dijon mustard
1 tsp poppy seeds
1 tbsp honey
salt & pepper to taste
Method:
In a small bowl mix together apple cider vinegar, mustard, honey, poppy seeds, and salt & pepper. Slowly add olive oil while whisking together. Set aside.
Pull stems off kale leaves and discard. Chop kale if desired. Drizzle a little olive oil over kale and massage for 2-3 minutes, until leaf color has darkened a bit.
Toss kale, strawberries, and summer squash in a large bowl with the dressing.
Top with sunflower seeds and goat cheese. Enjoy!
