Quick Rhubarb Compote
2-3 servings - 5 mins to prepare
Ingredients:
3 cups Rhubarb
½ cup sugar
1 tbsp water
pinch of cinnamon
zest of lemon (2 tsps)
Method:
In a saucepan, combine the rhubarb, sugar, water and cinnamon and lemon zest.
Simmer over low-medium heat for about 15 minutes, or until all the sugar has dissolved and the rhubarb has broken down.
Let cool.
Eat with ice cream, yogurt, pancakes, or anything you can dream up! You can store it in the fridge for over a week or freeze to be enjoyed later!
